1 pound of thinly sliced and pounded chicken breasts
1 tablespoon chopped fresh rosemary
2 tablespoons Dijon mustard
3 tablespoons of balsamic vinegar
1/4 cup of EVOO
How To Make This Masterpiece!
Mix all of the ingredients except for the chicken, salt, and pepper together in a 1-gallon zip-lock bag
Add the chicken breasts to the bag and massage the marinade into the meat until evenly coated Seal the bag and place it in a bowl in the refrigerator (the bowl protects against leakage); let the chicken marinate for at least 1 hour or overnight. (If you are short on time 30 mins works)
Preheat the grill to high heat and oil the grates (375-450 degrees F). Watch that temp!
Remove chicken from the bag, discard extra marinade (aka toss the Ziploc bag of the marinade in the trash), and season both sides of the chicken breasts generously with salt and pepper
Place the chicken breasts on the grill and cook, covered (lid down people), for 3 to 5 minutes per side
Transfer the chicken to a platter and let rest for five minutes
