Roasted Cherry Tomato Caprese
Ingredients
Level: Barely Cooking
- 1 pint of cherry tomatoes
- 3 tablespoons of extra-virgin olive oil + more for finishing
- 2 sprigs of thyme (if you don’t have thyme, all good- this recipe will still rock!)
- 2 garlic cloves
- 8 oz fresh mozzarella or burrata
- toasty bread
- fresh basil leaves
- Sea salt, flaky sea salt, or really any salt you prefer
- black pepper
How TF To Make It
- Roast tomatoes with sprigs thyme, a generous pinch of salt, a generous pinch of pepper, 3 tablespoons of extra-virgin olive oil, and garlic at 350 for about 20 minutes or until tomatoes are bursting open
- Arrange tomatoes on a platter and top with cheese
- Finish with more extra-virgin olive oil, salt, pepper, and basil
- Serve with toasted bread for dipping.
