Roasted Cherry Tomato Caprese



Level: Barely Cooking

  • 1 pint of cherry tomatoes
  • 3 tablespoons of extra-virgin olive oil + more for finishing
  • 2 sprigs of thyme (if you don’t have thyme, all good- this recipe will still rock!)
  • 2 garlic cloves
  • 8 oz fresh mozzarella or burrata
  • toasty bread
  • fresh basil leaves
  • Sea salt, flaky sea salt, or really any salt you prefer
  • black pepper

How TF To Make It

  1. Roast tomatoes with sprigs thyme, a generous pinch of salt, a generous pinch of pepper, 3 tablespoons of extra-virgin olive oil, and garlic at 350 for about 20 minutes or until tomatoes are bursting open
  2. Arrange tomatoes on a platter and top with cheese
  3. Finish with more extra-virgin olive oil, salt, pepper, and basil
  4. Serve with toasted bread for dipping.
