Roasted Carrots and Parsnips With Ginger and Maple

Serves 4 as a side dish
Ingredients
- 2 tablespoons Olive oil
- 4 medium Carrots, peeled & washed cut into medium slices
- 5 medium Parsnips, peeled & washed cut into medium slices
- 1 tablespoon softened butter
- 1 tablespoon pure maple syrup
- 1/2 tablespoon minced fresh ginger
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
How TF to Make Em
- Preheat the oven to 400 degrees
- Toss the cut carrots and parsnips with olive oil, salt, and pepper
- Place on tin foil-lined baking sheet
- Roast for 20 minutes until the carrots and parsnips start to cook through and become tender
- While the carrots and parsnips are cooking, make your compound butter. Combine butter, maple syrup, and fresh ginger in a small bowl
- Add the butter to the carrots and parsnips and toss
- Roast the carrots and parsnips for an additional 10-15 minutes until they become golden brown
