Maple Tahini Carrots


(serves 4 as a side dish)

Level: Super Easy

  • 14-16 carrots, peeled
  • 1/2 teaspoon of cumin ( if you don’t like cumin, the recipe will still be fire if you remove it)
  • 2 tablespoons of extra virgin olive oil
  • parsley for garnish

For Maple tahini glaze

  • 1/3 cup of extra virgin olive oil
  • 1.4 cup of tahini paste
  • 1/4 cup of lemon juice
  • 3 tablespoons of real maple syrup
  • 2-3 tablespoons of water
  • 1/2 teaspoon salt


  1. preheat oven to 425
  2. toss carrots with olive oil, cumin, and generous pinches of salt and pepper
  3. Roast until carrots are golden, about 25 minutes
  4. To make the Maple tahini glaze combine extra virgin olive oil, tahini paste, lemon juice, maple syrup, water, and salt
  5. toss carrots with Maple tahini glaze and garnish with parsley to serve
