Maple Tahini Carrots

Ingredients
(serves 4 as a side dish)
Level: Super Easy
- 14-16 carrots, peeled
- 1/2 teaspoon of cumin ( if you don’t like cumin, the recipe will still be fire if you remove it)
- 2 tablespoons of extra virgin olive oil
- parsley for garnish
For Maple tahini glaze
- 1/3 cup of extra virgin olive oil
- 1.4 cup of tahini paste
- 1/4 cup of lemon juice
- 3 tablespoons of real maple syrup
- 2-3 tablespoons of water
- 1/2 teaspoon salt
Directions
- preheat oven to 425
- toss carrots with olive oil, cumin, and generous pinches of salt and pepper
- Roast until carrots are golden, about 25 minutes
- To make the Maple tahini glaze combine extra virgin olive oil, tahini paste, lemon juice, maple syrup, water, and salt
- toss carrots with Maple tahini glaze and garnish with parsley to serve
