Cinnamon Crunch Matzo Granola

  • 2 cups crumbled matzo (about 3 sheets)
  • 1/2 cup sliced almonds
  • 1/2 cup roughly chopped pecans
  • 1 teaspoon kosher salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup melted coconut oil
  • 1/2 cup maple syrup

How TF To Make It

  1. Preheat the oven to 300 degrees
  2. Combine all the ingredients in a large bowl until combined
  3. Pour the granola onto a baking sheet lined with parchment paper
  4. Bake for 10 minutes, flip/toss the granola and bake for another 10 minutes
  5. Let the granola cool completely, undisturbed (at least 40 minutes)
  6. Store the granola in an airtight container at room temperature for 1 to 2 weeks.
