Cinnamon Crunch Matzo Granola

Ingredients
- 2 cups crumbled matzo (about 3 sheets)
- 1/2 cup sliced almonds
- 1/2 cup roughly chopped pecans
- 1 teaspoon kosher salt
- 1 tablespoon ground cinnamon
- 1/4 cup melted coconut oil
- 1/2 cup maple syrup
How TF To Make It
- Preheat the oven to 300 degrees
- Combine all the ingredients in a large bowl until combined
- Pour the granola onto a baking sheet lined with parchment paper
- Bake for 10 minutes, flip/toss the granola and bake for another 10 minutes
- Let the granola cool completely, undisturbed (at least 40 minutes)
- Store the granola in an airtight container at room temperature for 1 to 2 weeks.
