Garlicky White Bean Dip
Ingredients
(Serves 4 as an appetizer)
Level: Barely Cooking
- 1 can (15 oz) of cannellini beans washed and dried (yes, clean out Alll that gunk)
- ⅓ cup of extra-virgin olive oil
- 2 cloves grated garlic
- 1 tablespoon of lemon juice
- 1/2 teaspoon of Lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon of black pepper
- 1 tablespoon fresh flat-leaf parsley leaves, finely chopped
- 4-5 large fresh basil leaves, finely chiffonaded (a chiffonade is a fancy french word for the way the herbs are cut. You gotta stack the basil leaves, roll them up, and then slice the long ways. Heres’ a youtube video. Don’t worry it’s short.)
Directions
- Combine all the ingredients
- Enjoy with: grilled bread, grilled chicken, grilled fish, roasted veggies, salad, or really anything! Also a great addition to any cheese board for someone who is vegan or lactose. Sometimes I even eat this with bread as my dinner.
