Gluten-Free Pancakes

Ingredients
(make about 8-9 pancakes)
Level: Super Easy
- 2 VERY ripe medium Bananas
- 2 eggs
- 1/2 cup unsweetened almond milk or your milk of choice
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free oats
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup the topping of your choice like blueberries, chocolate chips, raspberries, bananas, etc.
How To Make Em
- Add all the ingredients except your toppings to a blender and blend on high until super smooth (1-2 minutes)
- Lightly coat a pan with the oil of your choice like coconut oil or butter over medium heat. Once the pan is hot, add 1/2 cup of batter to the pan and cook for 2-4 minutes on each side only flipping once
- Add your toppings on top of the pancake batter in the pan
- Enjoy!!
