Gluten-Free Pancakes



(make about 8-9 pancakes)

Level: Super Easy

  • 2 VERY ripe medium Bananas
  • 2 eggs
  • 1/2 cup unsweetened almond milk or your milk of choice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup the topping of your choice like blueberries, chocolate chips, raspberries, bananas, etc.

How To Make Em

  1. Add all the ingredients except your toppings to a blender and blend on high until super smooth (1-2 minutes)
  2. Lightly coat a pan with the oil of your choice like coconut oil or butter over medium heat. Once the pan is hot, add 1/2 cup of batter to the pan and cook for 2-4 minutes on each side only flipping once
  3. Add your toppings on top of the pancake batter in the pan
  4. Enjoy!!
